Head Baker

About the Role

We’re looking for a skilled and passionate Head Baker with a strong background in artisan bread baking to lead our bakery operations. The ideal candidate is a hands-on leader with a deep understanding of fermentation, dough handling, and traditional bread-making techniques. Key Responsibilities

• Lead daily bread production, including mixing, shaping, proofing, and baking a variety of breads (sourdough, baguettes, focaccia, etc.)
• Manage and mentor a team of bakers, ensuring efficiency, quality, and consistency
• Maintain and refine bread recipes, fermentation schedules, and production plans
• Oversee ingredient sourcing, inventory, and equipment maintenance
• Uphold all food safety, cleanliness, and sanitation standards in the bakery
• Collaborate with culinary leadership on menu development and seasonal offerings
• Ensure timely execution and delivery of baked goods for service and retail
• Continuously improve baking processes and train team members in best practices

Qualifications

• 3+ years of professional bread baking experience, including at least 1 year in a leadership role
• In-depth knowledge of sourdough, natural fermentation, preferments, and other artisan techniques
• Strong organizational and time management skills
• Ability to lead and inspire a team in a fast-paced environment
• Passion for high-quality, scratch baking and continuous learning
• Physical ability to lift heavy bags of flour and work long hours standing in a hot kitchen
• Availability for early morning shifts (starting as early as 3–5 AM)
